Brownies for breakfast?
Honestly, breakfast brownies are the one breakfast recipe that is GONE before I can freeze any leftovers. My 5 YO is a very very picky eater and this is a go-to when I want her to eat. She has been known to eat breakfast brownies for dinner.
I’m okay with that because this recipe is flourless, dairy-free, low in sugar (sometimes I leave it out altogether) and it has fruit, protein (from the egg), and oats. And, of course, no chocolate syrup garnish on her dinner version 😉
If you do happen to have any leftovers, this recipe keeps great in the fridge or even the freezer for about a week. Just heat it up for a quick, healthy breakfast they can grab on the way out the door.

How to make healthy brownies with banana and cocoa powder
Here is what you need to make chocolate-covered banana brownies.

2 1/4 cup quick oats
1/4 cup brown sugar*
3 very ripe bananas, mashed
1 egg
1 1/4 cup milk (I use almond milk but regular milk would work just as well)
1 teaspoon vanilla (you could also use banana extract for extra banana flavor)
1 Tablespoon cocoa powder (use 2 tablespoons if you want super chocolatey brownies!)
Optional additions:
1/4 cup chocolate morsels (I use these dairy-free, gluten-free mini-chips) to add to the batter
1 banana, sliced into small chunks to add to batter
Chocolate syrup topping – optional garnish(this is the one pictured that I use) (and a 2nd one that is a vegan option)

How to bake the brownies:
- Preheat oven to 350 degrees
- Spray 8×8 glass baking dish with cooking spray
- In a large bowl, add all ingredients and mix until combined. BE SURE THE 3 BANANAS ARE MASHED before adding to the bowl. Add optional chocolate chips and the additional banana sliced if desired.
- Spoon mixture into the baking dish and bake for 30 minutes. Allow to cool slightly before slicing.
- Cover with sliced bananas and chocolate syrup (optional) and serve!
*Can I make healthy brownies sugar-free?
It is perfectly acceptable to leave out the sugar! If you like an unsweetened treat, forgo the sugar altogether. You can also substitute with another sweetener such as stevia, xylitol, or coconut sugar! Follow substitution instruction on the package of your sugar substitute to ensure correct substitution ratios.
If you prefer a sweeter brownie, you can double the sugar to 1/2 cup. Remember that ripe bananas are sweet on their own.
I use organic brown coconut sugar but if you prefer white sugar, that will also work fine. Substitute in the same ratio (1/4 cup or 1/2 cup if you want them sweeter)!
Can I make healthy vegan brownies?
Yes! You can make this healthy brownie recipe vegan by substituting 1 egg for 1/2 cup unsweetened applesauce. I have done it many times and it makes the brownies softer and just as delicious!
To ensure this recipe is truly vegan, you should double-check that all your other ingredients are also vegan (i.e. use almond milk, vegan chocolate chips, etc). But I’m sure you already knew that 😉

Notes
*This recipe is intended to be a healthier version so the brownies are not overly sweet. You can increase the sugar to 1/2 cup if you like it sweet. You can also omit the sugar altogether for an unsweetened version (the ripe bananas are sweet on their own). Sugar substitutes will also work. Please follow substitution suggestions on the sweetener product you want to use to ensure proper ratios.
- I often refrigerate (or even freeze) leftovers for about 5 days. Reheat before serving
