Healthy Pizza Bagel Lunch
My two-year old is on a pizza kick. She asks for it every day. I am always looking for ways to make her meals healthy and this new pizza trend is no exception. One of the ways I have been getting her to eat healthy food is by letting her help in the preparation. Pizza is her favorite thing to make and she knows the process now. I just had to find a small swap-out to make healthier pizza. (As referenced in the series Let them eat cake!). You know it has to be quick and easy because I am a work-at-home, stay-at-home mom with two toddlers. My healthy answer was as simple as a bagel. This is a great recipe to let kids help prepare- it uses just three ingredients you probably have in the house.
Here’s what you need:
1 whole wheat bagel
2-3 Tablespoons pizza sauce
1/4 cup or so of shredded cheese (I used Cheddar but Mozzarella or Pizza blend would be great for this! 2% milk cheese is a healthier option)
Easy instructions: First, I sliced the bagel and threw it in the toaster to make it crisp. Then I let my toddler spoon the pizza sauce on each side and spread it around. Next she added shredded cheese (you can add some extra topping such as veggies or lean meat if desired). I put them in the microwave for about 30 seconds to melt the cheese then let them sit to cool. (You could use a toaster oven if you prefer a more crisp crust.) I cut each half into four smaller pieces, paired it with an apple, and we had a quick, healthy lunch!
As I always say, easting healthy doesn’t have to be difficult! It is often as easy as swapping out foods you normally eat for their healthier versions: skim milk instead of whole, reduced fat cheeses, whole wheat instead of white… Moderation also goes a long way!
