Inspired by their favorite mouse, these egg-free, baked chicken nuggets are easy to make and delicious to eat! They also make the perfect Micky Mouse party food!
Much healthier than store-bought nuggets, this recipe uses fresh ingredients, is simple to prepare, and bakes in about 30 minutes. A quick, easy, healthy, dinner that the kids will be excited about; what more can you ask for?!

What can I feed my picky eater for dinner?
Do you have one of those I-only-eat-mac-n-cheese-or-pizza kinds of kids? I do. She will eat almost any breakfast food so I try to get creative and switch it up (breakfast brownies are her favorite!).
When it comes to dinner, its always a struggle. I am constantly offering her new foods but she just won’t budge. Last week she randomly asked me if she could try carrots. Of course, I was excited at the thought of a healthy new food in her diet so I bought some.

I threw the carrots in with a roast so at least they didn’t go to waste but seriously kid?! It is a battle. Since she will eat chicken nuggets, I decided to try something to convince her.
Mickey Mouse chicken nuggets. It worked!
Using basically just a few ingredients, I was able to shape-up some Mickey Mouse nuggets that are egg-free and baked in the oven. They are so simple you can throw them together on busy soccer practice nights and still have time for a homemade dinner.
If you have a picky eater, especially one who refuses meats, this recipe might help them try a new food! Sometimes presentation is half the battle.

How to make healthy homemade chicken nuggets
Here’s what you need: (see recipe card below for more exact instructions)
1 pound ground chicken
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups bread crumbs (I use these organic bread crumbs or these gluten-free ones!)
Baking sheet
Parchment paper
How to make Micky Mouse chicken nuggets from scratch
Preheat oven to 350 degrees
Line a baking tray with parchment paper
Spread breadcrumbs on a plate (to dip the formed chicken nugget)
Add ground chicken a large bowl
Add seasonings and stir to combine (I use my hands to mash it all up). You can leave out the seasonings or switch them up to child’s taste.
To form the Mickey shape: Create one medium ball, like a meatball, lay on parchment paper, and flatten slightly to make the head. Make two smaller balls for the ears and place them on top of the head. Press gently to flatten and press into the head. It is a lot like working with playdough! I smooth the ears into the head just a bit so they will stay attached.
Gently pick up the formed Mickey shape and lay on bread crumbs. Cover top with bread crumbs so the entire shape is breaded.
Pick up the shape (be gentle!) and place it on the parchment paper.
Repeat until all ground chicken is used up.
Bake 30 minutes at 350. Oven times vary so always check for a safe internal temperature before eating!
They cook up crispy but not too crunchy! As noted, you should watch cooking time as oven temperatures will vary. Always check for proper internal cooking temperature before eating (you can check that here from foodsafety.gov).
Serve with your child’s favorite dipping sauce!
