The best mashed sweet potato recipe (and the new family favorite!)
They say smell is the strongest memory sense. I don’t think the scientists who said that ever tasted my great-grandmother’s sauce. One taste will transport you back to sitting in her dining room sopping up the sauce with Italian bread. Sometimes an amazing, special recipe creates a place in your heart that only taste can access.
That’s why writing down recipes is so important. When I lived in Florida, my roommate had this recipe for sweet potato pie… it totally changed Thanksgiving forever. I had never had sweet potato pie before and haven’t had one as delicious since. Of course, I didn’t write down the recipe. Big mistake. Every Thanksgiving I think about it. Several years in a row I tried to track her down to get the recipe (this was pre-social media time. Yes, I just dated myself). I should have written down that darn recipe…
So, I gave up on the sweet potato pie because it’s kind of like trying to recreate your grandmother’s sauce- it just never tastes the same. No matter how closely you follow the recipe, something about it just tastes different. Once I got over the pain of having to live the rest of my life without this amazing pie, I developed my own little sweet potato recipe. It tastes like pumpkin pie! It’s easy, yummy, and I know the recipe so I won’t have to endure the pain of losing it;)
Pumpkin Pie Mashed Sweet Potatoes
Here are the ingredients for the best mashed sweet potatoes ever!
3 pounds sweet potatoes (peels and cubed)
1/4 cup marshmallow cream (I use this one)
1/2 cup butter (softened)
2 tablespoons honey
1/4 cup French Vanilla coffee creamer (I also tried it with Pumpkin Pie creamer and it was delicious!)
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1 teaspoon Pumpkin Pie Spice
If you are going to peel sweet potatoes, potatoes, apples, or many other fruits/veggies with a skin, YOU NEED THIS PEELER. This was a total gamechanger for me! (This is an old video but it shows the power of this small, easy to use, and affordable little machine!).
