How to make an easy, homemade smores cake!
This super easy smores cake recipe is fluffy and moist with just the right amount of chocolate! Mix in some sweet marshmallows and serve with crispy marshmallows for a not-too-sweet dessert. Top it with a stream of delicious chocolate syrup to add some extra sweetness for an irresistible smores dessert!
This is the perfect smores cake recipe for a birthday cake, special occasion, or evening treat for those who like a sweet treat without the sugar overload!

Ingredients for smores cake:
2 Cups Flour
1/4 cup Sugar (If you like a sweeter cake, you can increase the sugar to 1/2 cup or even 3/4 cup if you like it sweet! I keep the sugar to 1/4 cup to keep this a lower-sugar recipe to meet our dietary needs)
1 T Baking Powder
1/4 teaspoon Salt
2 Tablespoon Cocoa Powder (increase to 3 Tablespoons for an extra chocolatey treat!)
2 Eggs
2 teaspoons Pure Vanilla Extract
1 1/2 cup Milk (I use almond milk but dairy would be fine too!)
2 Tablespoons Melted Butter or Coconut Oil
Garnish:
1/4 c plus 1 cup Marshmallows, divided (for mix-ins plus additional for garnish)
Graham Crackers (garnish)
Chocolate Syrup (Garnish)
How to make a homemade smores cake
- Grease 9×11″ baking dish
- Mix dry ingredients in a medium bowl (do not add marshmallows yet)
- Mix wet ingredients in a small bowl, making sure sugar eggs are beaten well
- Add wet ingredients to dry ingredients and mix until well incorporated
- Add marshmallows to the batter and mix a few times to coat
- Pour the mixture into the baking dish
- Cover and bake at 350 degrees or until toothpick comes out clean
- Remove from oven and allow to cool slightly.
- Cut into squares and plate.
- Add marshmallows to the top of cake slice. (I use the large marshmallows and cut them in half so they will stick to the cake. You can also use a long lighter to “toast” the marshmallows on top for an authentic s’mores look and taste!)
- Garnish with one graham cracker square on each slice.
- Drizzle with chocolate syrup (optional)
- Serve and enjoy!
- Refrigerate leftover slices for up to 4 days.

SQUARES: I cut this cake into 9 large squares but feel free to cut into as many slices as will fit your needs. Garnish each slice individually as the marshmallows don't stick well if you garnish while squares are still in the pan.
TOASTED MARSHMALLOWS: I used a long candle/grill lighter to "toast" the marshmallows. You can also leave them untoasted if desired.
