This is my new favorite oatmeal recipe. I can’t decide if it is better for breakfast or late-night snack. Either way, it is delicious. Add a hot cup of Cinnamon vanilla coffee, and you are bond to have a great day!

S’mores Oatmeal Recipe
Here’s what you need:
1/2 cup quick oats
1 cup water
1/4 cup french vanilla coffee creamer
1/4 cup chocolate morsels (divided)
1/4 cup crushed graham crackers
marshmallows for garnish
- Mix quick oats and water in microwave safe bowl and heat for 2 minutes on high.
- Remove from microwave, add creamer and stir
- Add half of the chocolate morsels and stir until melted
- Top with crushed graham crackers, marshmallows, and the rest of the chocolate morsels
- enjoy!
Easy and delicious. As always, ingredients can be modified to taste. (I would keep the 1:2 ration for oats and water though). I used vanilla graham crackers and crushed about 4 or 5 in a bag. They crush easily with your hands. You could also mix a few larger pieces into the oatmeal if you like that extra crunch.
HEALTHY SUBSTITUTES: If you are feeding this to your kids and want a healthier option, Coffee Mate makes an all natural vanilla creamer called Natural Bliss that uses natural ingredients and no GMOs. You could also substitute dark chocolate morsels for some extra antioxidants and forgo the marshmallows (since the creamer gives the vanilla flavor). You can even find fat-free graham crackers in the store, add protein powder, chai seeds… the possibilities are endless!

I have to say, I was intrigued just by the description. Then I saw how easy it is and I’m sold! I’d actually be trying it right now if we weren’t out of graham crackers. Figures!
